Cheesy Baked Beef Tacos

1: Heat a pan over medium-high heat with a bit of avocado oil.

2: Add diced onion and sauté for 2–3 minutes until softened.

3: Add ground beef and cook until browned, breaking it apart with a spoon.

4: Season with taco seasoning, salt, and pepper. Mix well and cook through. Set aside.

5: Lightly brush or spray both sides of corn tortillas with avocado oil.

6: Warm in the microwave or oven until soft and pliable.

7: Lay tortillas flat and sprinkle cheese on half of each tortilla.

8: Add a scoop of the beef mixture, then top with a little more cheese.

9: Fold the tortillas in half, pressing them gently closed.

10: Sprinkle more cheese on top of each taco (optional but encouraged!).

11: Place tacos on a baking sheet.

12: Bake at 375°F–425°F for 12–20 minutes, or until the cheese on top is golden brown and bubbly.

13: Blend all ingredients for Cilantro Lime Crema until smooth. Adjust salt and lime to taste.
