A delicious and easy-to-make Korean glass noodle stir fry with marinated steak and vegetables. Perfect for noodle cravings, this dish combines sweet potato glass noodles with a variety of vegetables and a savory sauce.
Boil vermicelli sweet potato starch glass noodles according to package instructions. Rinse with cold water and set aside with a light drizzle of sesame oil to prevent sticking.
In a hot pan, cook the marinated steak until browned. Remove and set aside.
In the same pan, cook the carrots, onion, green onion, and mushrooms until softened. Add a bit of garlic while cooking for extra flavor.
Once veggies are mostly cooked, add in spinach with a splash of water. Cover the pan and let it wilt.
Add the cooked noodles and steak back into the pan. Pour in extra sauce if needed (you can mix a little soy sauce, sesame oil, and brown sugar to refresh).
Toss everything together until evenly coated and heated through. Let the sauce slightly reduce.
Serve topped with the green parts of the green onion and a sprinkle of sesame seeds.
